Most tourists are out and about all day and want to get to bed reasonably early so it suits. Ditto the locals, I would much prefer to have a superb lunch out on a Sunday than go out any night of the week. Fresh, locally sourced, seasonal food is what makes up the majority of the menus in Irish gastro pubs. The magic happens when the chef conjures up something innovative with these same ingredients and it all comes together in a traditional Irish Pub setting with a warm welcome and friendly ambiance. These people care about what they are doing, they truly want you to have a good, affordable and authentic experience of Irish food. The devil is in the detail, God is in the result !
